This is war - Christmas goodies!

Yes, I've declared war on Christmas treats! I told you guys before that I was planning to be clean, clean clean! Well, I failed. When I tried before during this summer, I failed too! I know though, that when you REALLY put your mind to something, you CAN do it! I just needed a good kick in the rear!

Well, that is where this thing called a scale recently came into play. I haven't weighed myself since the summer. I've truly been avoiding the scale - avoiding what I know will not be good news. Finally, I had to face the music. While I've said it before, and I still do think this - that numbers aren't everything - it is a good indication to some degree of how you are doing. When you know you haven't been eating clean, you can expect those numbers to go up. 



I finally stepped on the scale and I was really disappointed in myself. Back to 153 lbs. I didn't need the SCALE to tell me that I've gained weight or that I've not been doing my best but sometimes a number can really help to get you back into gear! So, I've been eating extremely clean for a week and a half! I'm super proud of myself! I weighed myself yesterday and I'm back down to 148 lbs! But it's not just the NUMBERS, it's that I feel so much more healthy when I eat clean too! I don't feel addicted, my energy comes back - it's a win win!

I decided to make a holiday pact with myself. No Christmas or holiday treats (non-clean ones  - and only a weekly CLEAN treat) till Christmas! On Christmas Day, I'll allow myself a little break and have a little bit of the things I've missed and then back to clean! Let's see how I can lean out till Christmas Day! This is really tough because I run a holiday program at work and I'm SURROUNDED by holiday treats all day! But I know that I can do it and I really want to get back to a leaner me!

None of these till Christmas! 


I've been taking my daily photos too and I'll be doing a two week photo post! :) Can't wait to share them! 

I hope you will all join me in keeping clean for the holidays! Still, we don't have to avoid the holiday gain - we'll gain a lot - our health, feeling vibrant on NYE and a healthy figure to match our confidence!

Difference Making

When I started my business, I had made a post on one of the driving factors for me in making a business is that one day, I hope to be able to make more financial contributions to organizations or causes that are important to me. This year, for my business, I created an event where I thought I could do just that. This year I created a Thanksgiving ride for charity. Half the proceeds were to go to a local non-profit organization called the House of Charity. The House of Charity feeds up to 350 men and women every day. They also have meals 365 days per year! It's such a great organization and I even mention it on my tours as we pass by their location.



I was really pumped as just a couple of days before the ride, a group of 7 people joined! I was super excited I would be able to contribute a small amount to this organization! I spent all night the evening before preparing a new route (I was going to make it a bit shorter so people could get to their Thanksgiving festivities). I was super pumped even though I new I wouldn't be getting lots of sleep. Unfortunately, when I woke up on Thanksgiving morning, I opened my email to see that the group wouldn't be joining me as they didn't think they could do this and their festivities. I understood because Thanksgiving can be a chaotic day, so no hard feelings. However, I was bummed I wouldn't be able to contribute to a wonderful charity off of the event. 

Although I was disappointed, I began to think about all of the events that I WAS able to help with this year and the difference I HAVE made.

  1. For the second year in a row, I provided a certificate for free tours for the silent auction for my day job at Neighbors, Inc.
  2. I also provided 2 other certificates for raffles for an organization raising funds to make a film about Minnesota athletes as well as a raffle for a young lady who was recently diagnosed with leukemia. 
  3. I gave a free tour to church members of Zion Lutheran Church.

I don't think these have made huge differences, however I was really glad I was able to contribute - even a little - to some causes. I hope that I can continue to grow this aspect of my business in the future.



Thanksgiving was officially my last day of business for the biking season. Off of weekends until next spring! :) I will still be busy doing other business activities, however. Making new tour routes, creating new types of tours with local businesses, etc. I recently made ornaments out of old bike chains to sell with gift certificates during the holidays! :)

St. Paul-y Girl

I have some big news! I have finally found a place! Yea! I'm very excited to welcome a new change into my life! I will be moving to St. Paul, Minnesota where I will be only 6 miles from my day job (biking distance!) and a bit further from my business. However, this move makes more sense with regards to my current day to day life. After months of scouring Craigslist to find the perfect place to fit me and my budget, I finally did it! Can you tell I'm pumped?

Some people absolutely DREAD moving. They look at it like this:



I am not one of those people. One reason being that I don't have much "stuff"...at least not yet. I try and keep life as simple as possible. With my new place, I will have to acquire a bit more "stuff" as I now will actually have a bedroom AND a living space (imagine that, no more eating on my bed!).  I am happy that I will likely be acquiring my grandmother's old bedroom set. It will really help lessen the financial burden and I am glad we can keep grandma's items in the family.

The aspect that I love the MOST about moving though is that it's like turning over a new leaf. You get a fresh start, a new space, new organization, purging of old items, intake of new objects...it's all very exciting. Since I have been at this place for 2 years, living quarters have been tight. I miss having space to invite friends over, a table to eat on, space to do my office-type activities, and I mostly miss having my bedroom be a private space rather than a public one.


Don't get me wrong, I don't regret having lived in my 211 square foot place. Yes, I actually measured it today. Like I've said before, I knew when starting a business, sacrifices would need to be made. However, it provided me a great opportunity to save money, be close to my business and form some great new friendships. This woman has outgrown this space though now. I've come to a better place with my business and a better place financially. 

Finally, I'm looking forward to new design in my new space. I was looking around my apartment the other day and it hit me that I have grown a lot as a person,  but the items around me haven't changed. My designs/sights are all the same. I'm ready for new growth that way too. I have creative juices flowing through my brain (mental note: creative juices sounds kind of gross) and I have another concept in mind. Just for that concept, I've gotten some posters framed at a sale I caught at Michael's on Black Friday. I can't wait to get into my place near the end of the December and get to work! Don't worry, you all know that I'll be keeping you up to date on the new design and place! It'll be a fun treat for the holidays!

Holiday SLIM DOWN!

As I mentioned in yesterday's post, I have done some SERIOUS slacking on my clean eating. I feel like I have truly disappointed not only myself, but everyone who reads my posts. This is probably a reason I have been slacking on posting a bit because when I don't fulfill my goals I not only disappoint myself, but I feel as though I've disappointed readers as well.

I said before that I was re-committing to clean eating and then I failed. Yep, I truly failed. That's okay though because when you fail, you recognize it, make a conscious decision to change, and pull yourself up by your bootstraps and try, try, again! Here I am trying again!

I have had 2 days of clean eating now and I'm trying my hardest to stay fully focused and committed this time around! Sometimes, I need to make mini-goals for myself to accomplish my own BIG goal. Sometimes, I also need to involve OTHERS so that I can accomplish my own goals. Other people can also help to keep you accountable and motivated. In thinking about starting my clean eating again, I was reminded of the week that I kept track of my daily progress with clean eating and just how much my body changed with only one week of clean eating.

Look at how much difference there was in just ONE week! This picture really gets me motivated! I decided that I would once again track my progress for one week. Maybe even TWO! I was hoping that this would motivate some other people to join me in this adventure!

Now I'm well aware that Thanksgiving (for you people in the US) is coming up. I'm also well aware that often times people don't eat too well on Thanksgiving. I am a person who believes that you have to be in the right mindset and ready to change to accomplish goals. I am in the right mindset for myself RIGHT NOW. I think that being ready for a major change in diet just before Thanksgiving may not be for everyone. HOWEVER, what about the day AFTER Thanksgiving? That's right! No bringing home leftovers this year! This is why I'm asking anyone interested in joining me to complete their OWN week of clean eating with the DAMY Health program and to track their progress via pictures for one week.

Slack City

Yes, I have been up and missing. I'm here and working on things, but to be honest, I wanted to write a post because I feel like I have been in a rut. Yes, a rut. I have many new events/changes in life that are pending and I'm just waiting on something to happen.

I mentioned a while back that I was going to be moving. Well, I haven't yet. I was planning on moving in with my friend and was looking forward to it. However, she has a lot of other changes occurring in her life right now so she decided it was best for her to not move at the present moment. Because of this, I had to wait a bit longer to give my notice. I just handed in the notice for my place today and I've been spending every day online hunting down a new place. I'm debating whether or not I'd like to live alone again. I know that I am a major extrovert and, as such, I really like/need to be around people. However,   I am not really sure how I will do with having a roommate again. I am searching for both types of places at this point. If I am sharing, I will likely look on a month to month basis in the case that things don't go well in terms of living with other people.

My business season is coming to an end as well. I am going to be doing a Thanksgiving ride for charity and then after that, I will be closing. I will start to up my Internet activities and also be doing special offers to sell gift certificates. I have been working on a special craft that I can sell as an incentive during Christmas! Very excited to share that and I'll be sharing it all with you guys!

Finally, clean eating. I have been slacking. Very much. But I am getting back on track. To be honest, part of the reason that I haven't been posting is that on this front, I have been a bit disappointed with myself. When I am disappointed and not on point with goals, it hits me hard because not only do I feel like I am disappointing myself, but I am disappointing everyone who reads my blog. I will always come clean though and tell you all what is going on. The first step anyone can take in accomplishing goals is to be honest with themselves about where they are at with those goals. I have been slacking on clean eating, blogging and quite a bit of things lately. I think my living situation has been affecting this but I also think that I just simply am a bit burnt out. I have a vacation planned for this January to visit my sister and I can't WAIT! I think that it will be a nice break and good to be around my sister and her family. I will also go snowboarding with a friend during one of the weekends there! I am SUPER excited and vacation cannot come soon enough!

However, as I stated, yes, I have been slacking. With that said, I'm nailing down a few BASIC goals for myself as I get through this transition time of moving, etc.

1. Blogging at least ONCE a week. I will shoot for 2 posts, but ONE is necessary.
2. Posting on my Facebook business page at least TWICE a week.
3. Getting back on track with clean eating. More about this in a post that I have lined up for tomorrow.

This is where I have been, what I've been doing and what I've been slacking on. Now you all are aware and I'm hoping to get back on track with everything when I've moved and I'm more settled.

I'll leave you all at that and I'm going to get started on TOMORROW'S post because I have a great little offer for all of you!!! I can't wait to share it with you all and I hope that you join me!

Wednesday Recipe

It's Wednesday somewhere in the world! :) This past weekend I had a carb craving for some brunch yummies! I LOVE breakfast food. It's probably the one thing that I crave the most! I really wanted some indulgence this weekend but I live on a tight budget so I didn't want to go out and get food that would cost a lot and isn't good for me anyways. Bad on the budget and on the body. Instead, I decided to imitate a favorite breakfast food at home and make it clean. Here it is!

CLEAN CINNAMON RAISIN FRENCH TOAST


Definitely does not take a rocket scientist to come up with this one but I thought it was a fun recipe nonetheless. To make my french toast, I used Ezekiel Bread by Food For Life. I LOVE this stuff AND this brand! They also make EXCELLENT cereals that I love to add to my yogurt every now and again!


For those of you that are gluten sensitive, Food For Life also makes some gluten free versions - this particular one is not. I've had all sorts of their breads though and love them all! I also think that it's really cool they are a family run business and have stuck with their original processes. Anyways, I recommend trying these out if you haven't yet.

What I did for this recipe:


Mixed 1 egg and 2 egg whites in a bowl.
Sprinkle in cinnamon (as desired).
Add a splash of almond milk.
Beat mixture.
Dip both sides of bread in egg mixture.
Cook in a pan on the stove. Use coconut oil as your oil in your pan.
Cook on both sides and place on a plate.
Drizzle a small amount of agave syrup over french toast.
Enjoy!


*After I had made the french toast, I actually cooked up the remainder of the eggs and ate them! SO GOOD! Seriously, the egg and cinnamon mixture is excellent. It's become a new way to spice up eggs for me lately!

On the road again...

Ah yes, On The Road Again by Willie Nelson. This ties into my post today but it also makes me remember times past when my elementary school choir teacher, Mrs. Smith, would make us sing this song repetitively in class thereby ingraining the lyrics in my head for eternity. Oh yes, I know ALL the lyrics to this song. Gotta love Mrs. Smith!


But I am on the road again with one thing...eating CLEAN! I know, I told you all that I had fallen off  in the summer and I have not been eating as clean as I would like. I have been weakened by the death grip of processed and refined white sugars and carbohydrates, corrupted by kegs of beer - their nozzles staring at me longingly and I've succumb to my own excuses as to why I can't eat clean utilizing invites to every party, get together and outing during the summer as a way to eat the things my body does not need. NO MORE will sugar capture my attention, no matter how hard she flirtatiously bats her eyelashes at me. I will not cave! :)

So here I am again starting clean eating, with a clean slate, and a clean state of mind. I started eating clean this weekend because I have found that for me, being in a place where I can control my environment is the best way to start off. At work I am in less control of what is around me and I find that, with sweets and carbs abound at my workplace, it is much harder for me to get a good start. My major problem whenever I get back to clean is that there are certain times of the day that I CRAVE sweets. Once I give in, it's all over. Then I want more and more and more. My lovely lady friend, Lindsey, without knowing it, has gotten me addicted to club soda. This is a great alternative to pop or other sweet beverages. They have naturally flavored club sodas by La Croix and I love them! They've been getting me through my sweet cravings and it's just bubbly water! These are my current 'secret weapon'!


I know I've been doing well because I was definitely having a sugar detox headache yesterday. Thankfully it's gone today. I am ready now though and determined to get back to my clean eating ways! I feel the most healthy and best about myself when I eatthis way! I feel in control and happy!

Wednesday Recipe

I've been in the mood for fall goodies lately! I LOVE LOVE LOVE pumpkin! Did I mention before...I LOVE pumpkin! Yep, I do. I've been super craving some pumpkin bread lately. It's been taunting me in cafes I've been in and at markets. Yummy. I neededdd some pumpkin bread! I decided to try and make a clean protein version I could eat up for a snack! Here it is! I hope it turns out for you all!

CLEAN PROTEIN PUMPKIN LOAF


Ingredients:

1 can (15 oz) Garbanzo beans (drained and rinsed)
3/4 C Almond flour
1/4 C Agave syrup
1 C Pumpkin Puree
1 Tsp Baking powder
1 Pinch salt
1 Tsp Vanilla
1 Tbsp Pumpkin spice
1 Heaping scoop Protein powder (I used vanilla whey, you can use hemp or whatever you like to make it vegan)
1 Handful broken pecans


I might have eaten some of the pecans off the top...I love them. :)
In food processor mix all ingredients except almond flour and pecans. Blend until even and a runny puree. Pour into large bowl. Add almond flour. Mix thoroughly. Pour into greased (I used olive oil spray) glass bread loaf pan. Bake at 350 F for about 45 minutes (depending on your oven). It will still seem a bit soft in the middle but if the sides have browned pretty dark, the middle part will firm up when cooled. Let cool in pan. When cool, take out of pan. Slice and enjoy!

Positivity Tuesday - Join In!

I finished my goal of my very first century ride! :) I can now cross it off my list! I haven't updated you all on that because I'm going to make a video which takes time. I'll aim to get it out this week.

In other news, I've decided that TOMORROW is positivity Tuesday! That's right, spreading random acts of positivity! What may have inspired this? Well, a random act of positivity and kindness that someone did for me! It wasn't anything huge at all but someone that I don't know too well simply complimented my hair! That was it! That was all it took! It made me feel real good inside and it also reminded me how much those small positive acts can really make someone's day! That's why it's important to do them often. Sometimes, I slack on giving those positive comments but then someone reminds me of how important it is.

These reminders make me think of how much we ALL, me included, can complain rather than compliment or be thankful. We find the negative before we see the positive. Or we see the positive but we forget to comment on that. There are studies that show that you need 5 positive experiences for every 1 negative experience. These same studies also say that as humans, it's natural that we remember negative events far more than positive events. As such, we must bombard our brains with positive experiences to overcome the few negative events. Other studies have even proven that psychologists can pretty accurately predict divorce dependent on this ratio that they call "the magic ratio." What I am saying is, positivity and positive acts are important for us all!

This is why tomorrow is positivity Tuesday! Thus far, these are some of the positive acts I have planned:

My coworker was gone at work today. It was a busy, busy, busy day. I am not going to lie and say     that I was feeling positive about this situation today. However, rather than be negative that my coworker had her day off, I am going to thank my coworker for coming back tomorrow and let her know that I missed her and I appreciate her when she's around! That I can notice when she's not there and she makes a significant impact.

I am going to write a positive comment card at my gym. They have a comment and concern box     and I'm quite certain that an overwhelming amount of those cards are concerns and complaints rather than compliments. I'm going to put in compliments to everyone - especially those people that work hard and frequently get overlooked like the cleaners.

I am going to make sure to thank my friend again for biking 100 miles with me. I don't think that I stressed enough to him that I really appreciated it. I did.

I will make sure to compliment a random stranger on the street about their dress, hair or great personality!

Wednesday Recipe

This week's recipe isn't much of a recipe at all! In fact, it's more of a taste test! DAMY Health, during the summer, put up a raw food challenge. They suggested people try and eat at the very least, one meal a day raw. Well, I failed miserably. I tried one day to eat that way and I just didn't feel filled up and was missing cooked foods quite frankly. Lately though, I've been in the mood for some fresh veggies and nothing cooked.  I can't name why this is, it just is! I remembered seeing recipes similar to this one before (or at least the concept). So, I decided I would come up with my own concoction.


RAW SPICY THAI CASHEW & COCONUT ZUCCHINI PASTA


For this recipe, I was really wishing that I had a veggie spiraler. I've seen that they do wonders and people talk about how much they love them. Nonetheless, I had to do with what I had. Perhaps the spiraler can be an investment for the future.

Ingredients:.

1 Zucchini
Fresh Veggies
 (Choose what you would like in it. For mine, I used broccoli, red peppers and shredded carrots)
1 - 2 spoonfuls of cashew butter 
1/4 - 1/2 C light coconut milk
Ground ginger powder (or fresh ginger if you prefer)
Cayenne pepper
Garlic powder (or fresh garlic if you prefer)

First, using a peeler, I removed the dark skin from the zucchini. I then continued peeling the zucchini into long shredded pieces making my "pasta". I stopped shredding on each side when I reached the seeds. This is your bed of pasta. Put sliced up vegetable variety on top.

In a bowl, combine the cashew butter and coconut milk (you can always food process raw cashews and coconut milk too. I did this for time's sake and no raw cashews at my house). Mix until smooth consistency. You may want a thicker or more runny sauce. Put in less coconut milk for a thicker sauce. Add in garlic powder, cayenne pepper and ground ginger powder. The amount that you put in of these is really up to taste. I generally put the most garlic powder, next a few shakes of ginger and a little bit of cayenne to give it a bit of a kick. Pour this over your plate of veggies and "pasta". If you desire, something else that you could add to this for texture is to break some raw cashews into smaller pieces and sprinkle in with the dish. Now, enjoy!

Hope you all like this raw recipe! I finally feel like I at least did one meal justice with raw foods and maybe a late try at the DAMY Health challenge!

Goal Review - Goal To-Do!

I feel as though I need to be more specific about some long term goals on here. I have another list on my Wunder List app that are HUGE long term goals that I know one day I will get to. I feel as though I write smaller goals on here because I know that in life, it's all baby steps. I may spend some time reviewing some of my long term goals and adding some of them to the list. While I think small steps are good, I also think remembering long term goals keeps you dreaming and stretching. I feel like this is just what I need to do!



Lately, I haven't discussed knocking off some of the goals on my list. Since the business has been keeping me busy, I haven't really had the time to! Don't be disappointed in reading this though...because I have cleared a day off of my schedule this week to embark on one of those! Woo hoo! I love crossing goals off the list!

I know you are all curious...so this is what it's all about:



What else!? Biking! Maybe not QUITE like this, but I'll be sure to sneak in a moment very similar to this one! Even though I've been biking all summer, I still have one goal this summer that I really want to achieve and that is my century ride! I haven't trained at all for this, but I know I'm in good shape and I can do this! I recently did Babes in Bikeland, an all women alleycat race. I try and do that race every year. Since I've been doing tours all summer, I forgot how much fun it is to work my tail off and race around the city like an idiot! :) The second I took off from the race, my seat came loose! I rode 75% of the race with a seat that was jiggling all over the place! I even tore my leggings! Shucks! Even the tear in my panties was worth every moment of fun and challenge I had. It made me itch for more so I've cleared this Thursday off of my work schedule to do my very first century ride with my friend! YES! I am SO pumped! I'm going to keep you all updated during the day as well!

Change

Why yes, I'm going to ride off of the former political slogans of Obama...we want change and so do I! I mentioned in yesterday's post that I know I haven't been blogging much lately and that's due to several factors.

Firstly, time and stress. During the summer, I work 7 days a week. I work every day in the summer with no breaks between my business and my day job. When I do have a couple of days break, the last thing I feel like doing is hopping online and working more. Not that blogging is work, I enjoy it but sometimes I just need some decompression time, an opportunity to have more of a social life and not have to think about these things. This summer has also proven a bit more difficult at my day job. There has been an increase in demand at work and my coworker has taken several vacations during the summer leaving me to a week or more of work on my own (don't get me wrong, she needs vacations and deserves them too, I just can't have that luxury myself during the summer when I'm doing my business - don't worry, I'll make up for it this winter!). It can be very mentally taxing at my work and I find that when I get home from work during high peak times, I arrive exhausted and not fully driven to complete other tasks, like blogging. This has been a real struggle for me this summer because mentally, I want to blog and document my accomplishments and what I'm working on, however physically, I don't always have the drive to do so.


This stress and lack of time has contributed to another factor. I've gained some weight and to be perfectly honest with everyone and myself, I haven't been doing as well on clean eating as I would like. Lack of time and ambition when I have some free time has led to me not being able to prepare as many snacks and meals for the week as I normally would. I realize this can easily be seen as an excuse, however when I say I really am stressed and busy, I mean it. Yes, I have time I could be making meals, but that takes away from my social time - the little I have during the summer. When I'm stressed, the social time means a lot to me. I'm an extrovert and being able to socialize and be out of the house really benefits my mood. Ultimately, when I start eating a lot more sugars and refined foods, I become addicted again and crave those foods. It's a process I'm still working on and I'm trying to re-dedicate myself to clean eating. I have basically been at about 75% clean this summer. When I am not sticking to something I know is good for me, I don't feel I can blog about it with 100% honesty. But this post is honest about where I am at with that in this present moment of my life. 75% is not near enough but I know when I'm ready and the time is right, I will get back on this. I will keep you all updated! :)

So true! Diet is about 75% of staying fit and healthy! Eating good is so important and it's why I'm itching to get back to clean!


This lack of time and need for social activity has also led to a new important development for me and my currently living situation! Another situation that has become quite stressful for me over this summer has been my place of dwelling. As I mentioned, when I first moved there, it was a tiny place that worked for me because it was conveniently close to my business, affordable rent and I have a lovely landlord. On the downside, I was going to have to sacrifice space. I have done this for the past 2 years and now, I'm starting to crawl the walls! I feel very confined in my space and I know that now that I'm a little more financially stable with my business, I can afford just a bit more. However, I realized I can get a bigger space and spend about the same if I live with someone. That's where my new, wonderful and amazing friend, Lindsey comes in. I really get along with Lindsey who I met through a mutual friend.

We are both single gals, have similar interests, enjoy being healthy and eating well. We have come to the tough decision of moving in together and having our very own, "bachelorette pad"! I am nervous about this because I have lived alone for quite awhile (as has Lindsey). While I know there are some freedoms lost when moving in with someone, I also know that there are opportunities gained. It will be nice to have company when I am having a down day, someone to do social outings with and Lindsey and I have even spoken about having clean eating cooking days where we work on making treats and meals together! I think this will be a great change and I'm looking forward to it if everything pans out. It will be different, but sometimes new and different is good! If all pans out well, we should be moving in together in late fall.

Those are the reasons I haven't been blogging as frequently as I would like. Soon, my biking season will be coming to an end (although I'll still be working on it through the winter) and I can get back to some consistency and regularity. Also, a move will really do me good as well, I think.

Wednesday Recipe

I realize that today is Thursday, but let me preface this post by saying that I stayed up all night ON Wednesday making these. As far as I'm concerned, this is a Wednesday recipe! :) I did something AMAZING last night! I made one of THE best clean fall treats that I think I have EVER made! I was inspired by a post that my friend Karen put on Facebook - thanks Karen! I saw this recipe she had posted and thought, "I can totally make a clean version of that!" So I did! How could I deprive the world of a clean version of this amazing recipe?! I also stole part of my idea from DAMY Health and tweaked one of their recent recipes to achieve what I wanted. I hope you all enjoy this one and if you don't, you're just plain crazy! ;)

CLEAN PUMPKIN DOUGHNUTS WITH
TOASTED PECANS & MAPLE GLAZE

I adapted this yummy treat from THIS RECIPE on Shutterbean.com. While this is a very simple and fairly clean recipe already, I knew it could be cleaned up more - sans refined sugars and white flours! Easy as pie (or doughnuts in this case).
Doughnut Ingredients:
1/4 C oat flour
3/4 C almond flour
1/2 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon salt
1 C pureed pumpkin
1/4 C agave syrup
1 egg 
1/4 C melted coconut oil
1 teaspoon vanilla extract
* I made my own oat flour by blending organic gluten free oats in my Ninja Blender
** Make this recipe vegan by substituting 1/4 C no sugar added applesauce for the egg
Topping Ingredients:
1/4 cashew butter
1/4 melted coconut oil
2 tablespoons 100% pure maple syrup
1 teaspoon vanilla extract
1 handful pecans
* NOT high fructose corn syrup maple syrup - that is not syrup! ;)
** I stole the idea for this glaze from DAMY Health's Cinnamon Bun Recipe! I just changed the agave syrup for maple syrup. If you don't like maple flavor, you can just use agave instead.
Nom nom nom!
Preheat oven to 325 F. Grease doughnut molds with spray olive oil. To make the doughnuts I mixed all of the dry ingredients together in a larger bowl with a whisk. Next, I whisked all the wet ingredients together in a smaller-sized bowl. Add the wet ingredients to the dry ingredients and mix together evenly. Per Shutterbean's instructions I placed this mix in a ziplock baggie and cut one corner and filled a 6 doughnut sized pan. I did not fill them two thirds full per Shutterbean's instructions. I filled them much more full. I filled each doughnut mold evenly until all of the mix was gone. Bake in oven for roughly 25 minutes. These take longer to cook than the "dirty" version. They will not seem very stiff when they come out like a doughnut but you can peak into them with a fork to ensure they are cooked through. They will harden up and get more doughnut-like when they are cooled more. Cool in pan for about 5 minutes then pop each doughnut out onto a cooling rack.

While the donuts are cooling, toast your pecans and make your glaze. Place the handful of pecans on a pan and put in the 325 F oven. Check frequently to make sure these get toasted but not burnt; roughly 6-8 minutes. I let them cool a little then break them up into tinier pieces.

Add all glaze ingredients together in a small bowl. DAMY Health suggests using a food processor, however I simply mixed mine with a fork until fairly smooth then I mixed more vigorously with a whisk until a smooth, glossy glaze was attained. Place your cooled doughnuts on a place and spoon glaze over each doughnut evenly letting the glaze run down the sides of the doughnuts. Sprinkle your toasted pecans over the glazed doughnuts. You have melt in your mouth clean pumpkin doughnuts! I put mine in the fridge overnight on a place and the glaze got a real nice creamy harder texture to it! You can freeze these and thaw them out in the future to eat too!

For the ladies...

Lately, a huge theme in my life has been women. The coming together of women, women's rights, women as leaders and women as support groups. Women's issues also seem to be prevalent in the news lately with so much to-do about Akin's latest comment as well as women's healthcare via the new Obama plan.

Recently, my friend Lindsey borrowed me the documentary, "Miss Representation." The film talked about so many interesting issues involving women; the lack of women in high leadership positions and politics, the way women are quickly criticized for their looks rather than their policies, intelligence, leadership, etc., and even the fact that women tend to be the first criticize other women (see any article about recent Olympic gold medalist, Gabrielle Douglas, and her hair. ) Really? She just won a gold medal and was the first black woman to win gold in all-around for gymnastics and all we can focus on is her hair? I get that there are some cultural issues surrounding this but WOMEN, let's build each other UP and not tear each other DOWN!

Okay...not seriously. I thought it was kinda funny though! :)


Not only did this make me ponder all of these social issues that are taking place right now, but I also thought about myself and my own position as a woman who owns a business in a male-dominated sector. In the US, according to the last US Census Bureau Survey of Business Owners, only 28.8% of businesses were owned by women, compared to the 51.5% owned by men. Not only that, but I work in a male dominated sector - biking. Now, I can really only think of a few bike-oriented businesses owned by women in Minneapolis, but this article from Portland, Oregon gives a glimpse into female bike business ownership. Many times when giving a tour, people act with shock or awe when they ask about who owns the business and I respond, "I do." Many times I get the reaction, "Good for you!" I am not offended, people want to be supportive. I just can't help but wonder if a man would get the same response? When I started my business last year, I also went into a coffee shop to see if the owner would give discount coupons I could give to my riders. I would mention his shop as we passed during the tour. The owner begrudgingly gave them to me but also told me that, "Most people don't know how hard it is to start a business and most businesses don't survive." He looked at me like I had no clue what was involved in running a business and that I would inevitably fail. I don't hand out his coupons and I don't go buy coffee from his shop - nor mention it on my tour.

Along with all of this, I also had a recent conversation with my sister about our upbringing. My sister and I discussed how we grew up in a home that didn't treat boys and girls differently. We were all encouraged to pursue our interests and to learn - no matter what the subject and no matter boy or girl (we have a brother in the middle of us). We were continuously told that we could succeed in anything if we worked hard enough, put our minds to it and were willing to sacrifice. Ah, sacrifice - like the tiny place that I live in now to save money so I can spend it on my business rather than rent. It's not always been fun, but it's been worth it to be able to work in the field I want and pursue my passion.

Studies show that when girls and boys grow up, at a young age, girls and boys tend to be equal on aspiring to have leadership positions; positions in politics, news, business, science, etc. Only a few years later, they show that girls' aspirations to be in these positions drop drastically. What is it in those years that makes girls change? I've read this in a few different articles suggesting this as well as it was noted in "Miss Representation."


This makes me think about my own nieces and their experiences as well as their future. While I know their parents tell them that they all can be whatever they put their minds to, my own experience makes me want to reiterate this point. Additionally, I want to remind women to reinforce this to THEIR daughters, granddaughters and nieces.  Tell your young ladies that they are more than a face and a body. They have more to give this world. They are heart, intelligence, soul and strength. They will achieve whatever they truly put their minds to. Remind them to not let ANYONE tell them any differently. To my lovely young ladies - if you ever need a reminder of this, call your Auntie. She will be happy to remind you!


All of this reminds me of the success I want to have in my own business. It's not just for me, it's for other women. Women who want to work in the bike industry. Women who doubt themselves. Fellow female entrepreneurs. For my nieces. For my family who has always told me that I can do anything I put my mind to. For my late grandmother, an entrepreneur herself, who understood when I sacrificed time away from her and my family for my business. The grandmother that told me that my business was more important - and it wasn't - but she wanted me to succeed and supported my dreams.

This brings me to my final thought. Women - let us support one another. Let us not be jealous and critical. Let us build women up for their successes and not tear them down for their inadequacies, for we all have them. Let us focus on our words, our minds, our strength, our talents and not our appearance. We are more than our shells. Let us all be confident in ourselves and work towards our ambitions. Don't ever doubt your own dreams. Walk towards the mission you feel that is in your heart and when things get difficult, know that the women in your lives will be there to support you. Women, be the support other women need.

A Balanced Life

I've been very busy this summer; the business, the blog, the other job, gym time and oh yeah, the other thing, a social life. Wait, what? A social life? What is that?!

Ah yes, the dilemma of a productive woman's life...when in the HECK do you have time for a social life?! Let's face it, I'm a single woman, a girl needs to date every now and again! ;) I have been feeling a longing for other companionship this year though and that's that of a group of friends. A group of friends I can see on a regular basis! Don't get me wrong, I have some GREAT friends already. Some of whom I've missed a lot this summer. Most of my friends, however, are married, recently married or in a relationship. This means, I don't see them too much anymore. That's not to say that it's their fault or my fault. It's both of our faults. I don't want to be a bother and impose too much and with my busy life, don't always do the best at inviting and tracking people down. Sometimes, understandably, you hear less from those people because they are busy with their lives and companions. I realized, around my goal of having more get togethers with friends, I also just needed to branch out and make some NEW friends. Not because I don't like my other friends, or I'm mad at them, nothing like that...simply the fact of having new friends/activities. Also, this can put me into new social situations where, hey, you never know, I may meet a significant other!



The other reason that I've been working on this is that I know that with my business and everything else that I have going on, I don't always lead a balanced life. I miss out on social gatherings with new groups of friends because I have to be around for my business. It's quite difficult to try and cook your meals, keep your house cleaned, workout regularly, maintain a business properly and hold down a job AND keep a social life! I find myself getting less and less sleep. I have not been as true to my clean eating as I would like this summer. Simply finding time and ambition to do so can be really difficult some days but I'm doing my best to stick with it. I've maintained where I'm at and am still quite happy with how I am though I know I have been a bit leaner. However, I am deciding not to fret over it and keep doing my best. I have a lot on my plate right now and balance is key right now.



With that said, my social life is something I'm trying to balance back in. I'm trying to get myself out there to social events and try new things when possible around my work schedule. It's funny that I recently went to a social even with a new friend and said, "Wow! So this is what normal people do on Sunday evenings?! I've been locked in my house for a year every weekend!" lol I know, it sounds sad and it doesn't mean that while in my house, I wasn't enjoying life. I was. Simply because I've been working on things I'm passionate about. Now however, I realize I need to come back to balance. Balance keeps me away from my blog sometimes, it keeps me up at night, but is well worth it. With time and growing success of my business, I can only hope that balance becomes easier.

Wednesday Recipe

I've got a new little smoothie going for you guys! I'm calling it the, "Fruity Without The Fruit Smoothie"! I have discovered my new most favorite herb in the world. I didn't even plan on it, it just sort of happened when I had bought the half priced plants at the Ace Hardware by my place. They had a lemon basil plant. It smelled good, so I thought I'd try it. SERIOUSLY this stuff is AWESOME! You have not experienced life until you have tried lemon basil! No JOKE!

I started thinking, "Hmmm, what can I do with this?" My friend suggested putting it in a smoothie...WOWIE! Love this stuff! I'm now a lemon basil junkie! I've been looking for other ways to cook it and I've found some chicken marinades and I was thinking I could try and steep it some night for a nice lemon tea! We'll have to see! For now, I've just got this basic smoothie recipe for you! 

"FRUITY WITHOUT THE FRUIT SMOOTHIE"


Place in a blender:

1 scoop of protein powder (I used vanilla whey)
1 handful of lemon basil
1 handful of ice (or more depending on the consistency you like your smoothies)
3/4 unsweetened vanilla almond milk

OR

1/2 C Non-fat plain greek yogurt
1 handful lemon basil
1 handful ice
1/2 cup unsweetened vanilla almond milk
1-2 tablespoons agave syrup (or you can use a small scoop of stevia extract)

Blend.
Devour.
