Wear. And. Fare. Wednesday.

It's here again!!!

I wore this little number out last Friday to sing karaoke with friends from my dodgeball team! I love it!  I made a few cute outfits this week with that scarf! Here's what I'm wearin':

I made these beauties this weekend! I got the idea from 2 sources. I don't remember where but I had seen these once online and a person did them with tortillas rather than phyllo. I could still do them with ezekiel wraps or sprouted grain tortillas, but I wanted to try the phyllo dough. I got the phyllo dough idea from none other than DAMY Health. They  have some great recipes with phyllo dough so you should go on the blog and check them out! This was my phyllo dough quiche!

What I did:

Phyllo dough: purchased at Lund's (you usually find this in the freezer section). 

I cut the phyllo dough into squares and spread some light olive oil on each sheet. I used 5 sheets per quiche. I placed the stack of 5 into a lightly oiled muffin pan to make the cup shape.

Next:

I mixed 4 egg whites, salt, pepper, diced peppers and onion. I divided this mixture between the 2 phyllo dough cups. On top, I sprinkled a small amount of mozzarella cheese.

Bake in the oven at 350 degrees for about 30 mins (depending on your oven) and voila!
2 mini-quiches for brunch! YUM!

I apologize but I had to cut my head off because this picture was SO awful and I didn't realize and hadn't saved any other ones! I kind of looked drugged, so we'll just cut off the top! :)

I've been needing some new flavors, as I earlier mentioned, so I've been working on trying some new spices and marinades with my chicken and vegetables. I found this Ginger Honey Chicken recipe last week on the Livestrong website. I really liked this combination and it was tasty and a nice change!

The only things that I changed in this recipe was that I didn't have a hot sauce so I used cayenne pepper instead. This was really tasty and I nice way to mix things up a bit.

Wear. And. Fare. Day.

I've had this post sitting in my saved posts and the week just FLEW by so I didn't even get it posted! But here it is! It works out this way as the food is GREEN in the spirit of St. Patrick's Day!

I put this outfit together for the warmer days this week at work! I've run into one problem for the spring/summer. I have NO light colore/fabric pants to wear. I will have to make some exchanges at the thrift store and try and get some new pants. I do have plenty of skirts and dresses to get through the summer though which is nice! I put this one together quickly before work - albeit with dark pants. I did get compliments at work though!

As I mentioned earlier this week, I wanted to share a new tofu recipe with you all that I tried this week. As I'm needing some new flavors, I thought it could be fun to mix in some new proteins. I've never been a huge fan of tofu, but I'm always willing to give things another try! I made this Apple Smoothie and it had a nice flavor, but I was unsure about the texture. After talking with my friend who used to be vegetarian, she informed me that the reason it was gritty was that I needed to get the "Silken" tofu. I had bought the extra firm! Duly noted and I'm willing to give it another whirl sometime soon!

I found this recipe on the lovely site, called The Gracious Pantry. It focuses on clean eating recipes. Some of the recipes I am able to alter to make them even more clean. Unfortunately, I didn't get a picture of this the day I made it! However, I assure you all that it IS green for St. Patty's!

Wear. And. Fare. Wednesday.

Aaah yes! Clearly I'm back in the swing of things! Imagine that...a Wednesday post on Wednesday!! 
I have a lovely little dish for you guys today and a cute little new outfit I put together! Enjoy!

I had all of these pieces for this outfit, minus the shirt which I just picked up on my first day of vacation. It caught my eye when I was also in search for some biking shorts for a yoga class.  Love this top!

During vacation, I can't promise that I was the best model of clean eating. I gave myself room to slack off during vacation but now I'm back on track. During my fantastic time out with my friend, Sarah, we went to brunch in the morning. We stopped at this restaurant that neither of us had been to and I ordered an egg scramble breakfast. Oh my gosh, was it good! It had potatoes and peppers and it just had this nice little kick to it. I was hooked! After that day, I was still craving it again! I decided to try and make my own clean version of this so I can enjoy it time and time again.  




How I did it!

I took one clove of garlic and minced it finely. Then, I chopped up onions and red peppers. I began to saute these all in a pan with some olive oil. Meanwhile, in the microwave I cooked at sweet potato. When it was finished, I diced it up into square pieces (skins on). I then added the chunks of potato into the pan with the vegetables. I added several spices to give this a kick - 1/2 tsp turmeric, 1/4 cumin, 1/2 tsp paprika and chili powder to taste. I thought I put maybe too much chili powder in but when I ate it, I thought it could use more, it didn't have the kick that I expected but it was still SOOOO good! I sauteed the veggies, spices and potatoes together till the potatoes had a bit of a crunch. I took out the vegetables then in the same pan cooked 3 egg whites with one whole egg. I also think in the future I will try just scrambling the egg into the mixture. I still have some experimentation to do with this but it still was just what the doctor ordered! Wear. And. Fare. DAY!

Since I haven't been able to get my Wednesday posts up regularly, I can't really call this Wear and Fare Wednesday anymore. It's official. Until I can get back to a regular schedule, it's just Wear and Fare Day!

Today for work I tried to put together somethig a little bit different. I know you all have seen this skirt before. I love it. I put it together with an all gray base (gray tights and long sleeved tee) and then added a pop of color on top. Put this together quick. I think I did a great job for no planning and it being a quick morning decision!

Better. Late. Than. Never

As you may have noticed, my regular Wednesday post didn't come through. I'm running a bit behind. I did, however, make myself a new outfit and a new goodie this week! Scroll down to see! :)

This is a nice new skirt that I got from Everyday People, a thrift store in Uptown. I LOVE this skirt! It is originally from H&M and it's perfect for my body shape! A nice full skirt with polka dots! I love it! I also like that I could wear this one in the winter or the summer! Score!

DAMY Health Protein Cookies!
If you follow me on my Facebook page, you may have noticed a little post about these. These cookies are probably one of the best creations I've ever had in my life!!! SO yummy and SO healthy! You can't go wrong! It's now turned into one of my favorites from DAMY Health. You should try this recipe and then if you're impressed, you should join DAMY Health, get some new healthy eating habits and enjoy many more recipes just like this! I made these chocolate chip style the first time, as indicated in her link. Find this recipe HERE! Click on the "BLOG" Section and then type in "Protein Cookies."


I did however, make a fun modification the second time. Clean eating oatmeal raisin cookies!
Here were my adjustments: Instead of 19oz of garbanzo beans, I used a can of 15 oz. I then added 1/4 of gluten free oats. I added a lot more cinnamon and a small sprinkling of nutmeg. Before making the batter into the cookie shapes, mix in the raisins. Not too much. I figured about 6 per cookie or so. If you just put them on top, they will burn or get crunchy. Also, in both the chocolate chip and oatmeal raisin cookes, I used only 1/4 of agave. I don't like to use Stevia personally. Enjoy! These things are GREAT!

New. Wear. And. Fare. Wednesday.

It's time again for another Wear and Fare Wednesday! Yea! I am super excited about this one! This New Year's Eve, I took it upon myself to dress up! I have never ever ever dressed up for a New Year's Eve so this was something new and special to me! I wasn't even going any place fancy, just to my close friends' house, James and Kenna. It was a casual affair but I didn't care that no one else was going to be dressed up or not, I simply wanted to dress up, to dress up and feel good being me! And I did just that! I went out and found a cute new outfit to wear and I enjoyed being out and wearing it! Here it is!

A pic of the dress on it's own. The back was longer than the front and rounded. It gave it that "gentleman's tux" feel. I liked it! Plus, you never have to worry about bending over! ;)


I also paired it with some lacy earrings from Nordstrom.  I got these a few years back.

Clean eating biscuits! I had the biggest craving for a biscuit this weekend! I couldn't handle it anymore, so I broke down and had one...but a CLEAN one, so it didn't seem so naughty after all! I found the recipe HERE.

I made some simple modifications to this: I used melted coconut oil for the oil and unsweetened almond milk.

I made my own oat flour by blending it in the food processor. The recipe says it makes 6-10. I made 6 and I found them to be rather small. I think you could easily make 3 regular sized biscuits with this. I think that is what I'll do next time!  This was such a great treat! I popped the others in the freezer to have at a later date!

New. Wear. And. Fare. Wednesday.

I'm back this week now that I'm feeling much better! Here are some newbies for you all!

Yep, I broke out the bell bottoms! These are new flare jeans by Old Navy...and they have a high waist! Yippee! Love to pair them with tucked in shirts and get my 60s hippy on! I often times throw a black jacket or other jacket or sweater over this in the winter. I think I wore a purple one last time!

Butternut Squash Arroz con Leche

I have been having  a lot of butternut squash soup lately but have been getting a little burnt out on it. I made some for Thanksgiving and I had half of a leftover squash and was trying to think of things to do with it. I realized I could make a healthy arroz con leche with it as a little clean treat at lunch!

How I made it:

First I poked holes in the squash, scooped out the guts and put it in the microwave. I cooked it maybe about 6 minutes. I didn't want it to be too mushy as it was still going to get the opportunity to cook some more. I took it out and peeled off the skin and diced it into pieces.

Next I put 1/2 C of almond milk in a sauce pan and on medium heat waited till it started boiling. I then put in rice - I used 1/2 C cooked brown rice, about 1/4 - 1/2 C squash pieces, a small scoop of slivered almonds, cinnamon (as much or as little as you like), a little bit of grated lime rind, a small spoonful of raisins and a dab of agave syrup. I waited till this all cooked down and thickened up a bit. And that's all! Super tasty and clean! I loved it!

I put this outfit together today and I love it! Looking at it now, I guess I need another undershirt under the white shirt! Duly noted for next time. I love everything about this outfit. It's warm, cozy, comfortable, just perfect! I love these jeans that I got from Old Navy They are grey-ish in color and I just love them! Plus, they are really comfortable AND higher at the waist! :) Also, the sweater I just love!! I bought it from a local shop here, located in St. Paul, called Karma.

To be honest, I didn't get to cook anything new this week! I got caught up on lots of other cooking instead: butternut squash soup, greek yogurt, etc. What I am going to do though, is post something new I bought the ingredients for and PLAN on making this week! :) It's a lovely DAMY recipe and I've been wanting to try this one for AGES!!!!!


It's clean and carb free!!! Plus you get more veggies!

Writing late again on a Thursday! Oops! But, I'm doing it! :) Here it is!

When I recently had my shopping spree at Old Navy for their BOGO sale, I also knew that I wanted some long sleeve A-line dresses! Old Navy didn't have any, but H&M did! I went and picked up two A-line dresses! I love them! I paired this one with a short-sleeved sweater, scarf, tights and boots! I love the color that the scarf adds to the outfit!

A few weeks ago, I made my own pumpkin smoothie at home! It was delicious! As I've said, I've been on a major pumpkin bender! I used the ingredients below!


1/2 C Non-fat Greek yogurt
1/4-1/3 C pureed pumpkin
Dash of Cinnamon and Nutmeg
1 Tbsp Agave Syrup (approx.)
Not pictured - few in a threw ice cubes to make it a smoothie!

Blend everything together and you will be able to suck up the joyous flavor of pumpkin through a straw!
YUM!

I'm back this week with a new Wear and Fare day! Yea! Been so busy lately! Why do I feel like there aren't enough hours in the day to sleep much less get my stuff done?!?! Well, here goes nothing! :)

Strawberry and Spinach Quinoa Salad with Poppyseed Dressing
(Note: Minus the poppyseeds) :)

I was really craving a nice big salad one day and wanted something new. I decided to throw together a few things to get my carbs, veggies, fruit and protein all in one! I also had some extra protein on the side - some chicken breast. And you could just as well throw that on here too if you like! 

Clearly, I just put the spinach, quinoa and strawberries on the plate. Easy task! If you are looking for a GREAT carb choice that will give you fuel and has tons of nutritional benefits, quinoa is the way to go! It isn't even technically a grain! It is more closely related to spinach, beets and tumbleweed! Quinoa is gluten free, a complete protein and a good source of iron! Clearly a carb that every woman should have in her diet! 

The real kicker for this salad was the dressing! I LOVE this dressing and was craving something different to what I have had in a while. This is how I make it!

Poppyseed Dressing

A couple of spoonfuls of non-fat greek yogurt
Juice from one lime
Olive oil
Agave syrup
Poppyseeds (if desired - I didn't have any at home at the time so I didn't add any)

First put a couple of spoonfuls of yogurt into a bowl. Next squeeze the lime into the bowl. Add a small squirt of agave syrup. Mix these ingredients together well. Next, slowly drizzle in some olive oil while stirring - this helps to make a good consistency. I don't measure how much I put in, I just kind of go by taste and how liquid my dressing is or isn't. It should remain a whitish color though. I use a whisk to help with this part. Finally, add in your poppyseeds if you have them and you are done! I love this dressing with spinach and fruit! Such a great combination!

So, like I said, I've been on a HUGE pumpkin kick! I LOVE pumpkin. Once this season comes around I can't get enough of it! I actually found this protein pancake recipe from a woman who is also linked to the DAMY Health program! Her name is Kyla or also Inside_Out_Fitness and of course, she eats clean too! She has a great little blog as well and I simply adore the fact that on her Facebook page she also puts recipes! I came across this one and FELL IN LOVE! You can find the recipe here on her note page! Scroll to "Oatmeal Protein Pancake". It's SO amazingly good! I didn't have banana on hand though for mine and I have yet to try it that way. This is what I did instead:


I peeled, chopped into quarters and boiled an apple. Then I took out the cooked and softened apple pieces and mashed them with a fork until they were a sort of chunky puree. I also added some cinnamon! Instead of the banana, I added the apple! So good! I highly recommend this one if you are craving pumpkin-y goodness!!

I've been so busy that I missed you guys last week! I haven't even blogged in over a week! That is good because in one way it means that I am out and accomplishing things. On the other hand, I haven't had time to share them with you all yet! I will, I will. I just have to get time to write them down for you all! I wanted to try and do this Wednesday's post though at the very least!

I threw together a brand new work outfit today. These are some cute new gray pants that I got at Old Navy during my shopping spree! Love them! Plus they make my legs look a mile long! Perfect for the fall weather we had today!

I love these ankle boots by ALDO! They are my favorites to pair with any boot cut pants or leggings!

Tis the season for all varieties of squash! I LOVE squash - butternut, spaghetti, all things pumpkin! YUM!

I am in love with this butternut squash soup recipe that I found online. Better yet, I've made it even cleaner than it was per the recipe! And for those wondering...yes! You can have a smooth, creamy and tasty butternut squash soup SANS the cream!!!
I found THIS recipe on allrecipes.com. Down below I've added my modifications for a CLEAN butternut squash soup! 

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 1 stalk celery, chopped
  • 1 medium carrot, chopped
  • 1 small sweet potato, cubed
  • 1 medium butternut squash - peeled, seeded, and cubed
  • 1 (32 fluid ounce) container organic, no added sugar, chicken stock
  •  freshly ground black pepper to taste


  1. Pour the olive oil in a large pot, and cook the onion, celery, carrot, potato, and squash 5 minutes, or until lightly browned. Pour in enough of the chicken stock to cover vegetables. Bring to a boil. Reduce heat to low, cover pot, and simmer 40 minutes, or until all vegetables are tender.
  2. Let cool. Transfer the soup to a blender (or food processor), and blend until smooth. Season with pepper.

I personally do not use extra salt in my soup, I find it to be salty enough. I just add fresh ground pepper to mine. I love this for a vegetable serving with my lunch! Delish!

Made it on a Wednesday! :) I'm super pumped about this one this week! Hope that you guys enjoy!

A fun and colorful little number that I got on my shopping adventure for a new wardrobe! I have to be honest though, I stole the idea behind this one from stylist and blogger, Sally, at Already Pretty. She did a post on this red skirt with a magenta blouse. I was standing in Old Navy (they had a 'Buy One Get One 75% off sale - perfect for trying to get a new wardrobe!) trying to think of and make outfits in my head.  I simply couldn't think of WHAT to do with this skirt! Then suddenly, I remember Sally's post a while back on THIS darling outfit she put together. I realized, I didn't need to make something match, I just had to find something bright red to go with it! So this is my reverse Sally outfit!

I felt simply glowing in this outfit all day! Even took a spin on my bike in it!

I've been super excited all week to post this! It's clean apple crisp!

My mom's apple crisp - clean style!
I was searching for the perfect CLEAN apple crisp recipe one day because I had been craving a fall sweet treat! I was looking online for quite a while and just wasn't finding any versions that I was happy with or that I thought were clean enough. I finally was about to give up and realized what I REALLY wanted was just my mom's apple crisp - but clean style! I called my mom up later and asked her for her recipe and began creating this clean apple crisp version of my own!

MOM'S CLEAN APPLE CRISP FOR TWO
(This was large enough for two people - share it with a loved one on a cool fall day!)

Ingredients

1 Large Granny Smith Apple
1/4 Old Fashioned Oats
1/4 Almond Meal
1 Tsp Cinnamon
1 Tsp Nutmeg
3 Tbsp Coconut Oil
2 Tbsp Agave Syrup
1 Glass Round Oven Safe Dish

After thinking about this recipe later, I thought another good and healthy thing you could add is a spoonful of ground flax. I'll have to try that next time!

1. Peel apple and cut peeled apple pieces into glass dish.
2. Mix together dry ingredients (oats, almond meal, cinnamon, nutmeg)
3. Melt coconut oil in microwave (took me about 30 seconds on high)
4. Pour coconut oil and agave syrup into dry ingredients and mix well.


5. Spread this mixture evenly over the apples in the bowl as seen below.


6. Bake in oven at 350F until the top becomes a bit crunchy and the apples are visibly cooked.
7. ENJOY!

As promised, my updated wardrobe piece and my new food! Here we go!

This is the outfit I put together for work the other day. I have NO pants right now! That's a lie. I actually FINALLY bought a pair of discounted pants today. My only work pants that I have that actually fit! I've been using my jeggings and dresses/skirts instead at work. This is what I put together with my HUE jeggings (I love them! Especially the shorts!) one day for work.

My coworker commented on how she liked my look! They also said that the olive color brought out my eye color! Sounds like I made a good choice!

Well... I have been cooking this week! NOTHING new again! Although, I have been looking up recipes for something I want to put together soon...yummmm I can't wait! It'll be a sweet treat and I'll have it when I finish my LAST week of the DAMY Health program! Don't worry, it's a CLEAN sweet treat! :)

For now, this is my new favorite hot beverage that keeps me warm in the fall rather than opting for a hot cocoa or some other hot sugary drink in the evening.

Herbal teas to keep you warm in the cold seasons!

Some hot HERBAL tea! No sugar added! There are really some GREAT flavors of herbal tea that will warm you up and taste great, sans the sugar buzz. Pictured here is a chamomile. One of my FAVORITE brands of teas are the Mighty Leaf teas. They make a YUMMY chamomile tea that I just love! It has hints of citrus in it and is so good! Highly recommend trying it if you haven't.

Back again with some groovy new duds and grubs!

Due to my lack of clothing that ACTUALLY fits me (I am selling most of them on Ebay!), I've been having to buy new items for my wardrobe! I bought this cute little dress at Target when on vacation in Colorado! I really liked the cut and colors for me! I paired it with some cute boots, a gray sweater and turquoise tights! A perfect fall weather day outfit!

Yummy DAMY Health Recipe!
I once again lost some creativity this week with cooking! Just haven't had the time to work on something new! I did, however, steal one of DAMY's recipes again this week for snacks! Although, I am not going to be eating much of this for a while (explanation to follow in a post tomorrow). DAMY has a WONDERFUL clean version of Nutella! A great and clean snack to eat with an apple or maybe a brown rice cake. Or whatever your heart desires (well, to an extent if you want it to be clean)! I made this and I've got to say it is YUMMY!
